Walnut oil

Walnut oil suppliers and sourcing guide

Walnut oil is pressed from the kernels of the English or Persian walnut, Juglans regia, much of it from California, France and China. It is high in linoleic acid and contains alpha-linolenic acid, so it is less stable than most nut oils. It is sold as roasted (toasted) culinary oil, cold-pressed oil for foods and supplements, and refined oil for cosmetics.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Fatty acid profile
Fatty acid composition by GC of the methyl esters (AOCS Ce 1-62 or an equivalent ISO method), reported as percent of total fatty acids; linoleic and alpha-linolenic acids are the key figures.
Peroxide and anisidine values
Peroxide value (AOCS Cd 8b-90) for primary oxidation and p-anisidine value for secondary oxidation, often combined as TOTOX; these show how fresh the oil is at release.
Free fatty acids
Free fatty acids or acid value by titration (AOCS Ca 5a-40 or Cd 3d-63), which rises with poor seed handling, hydrolysis and age.
Aflatoxins
Aflatoxins B1, B2, G1 and G2 by HPLC or LC-MS/MS, relevant to nut oils, especially unrefined grades.
Allergen and identity
Supplier statement on refining level and allergen status, plus identity tests such as iodine value; unrefined oil carries walnut protein.

Storage, lots and expiry

Storage and shelf life

Store sealed, cool and dark, and refrigerate after opening; walnut oil turns rancid faster than most nut oils. Buy in sizes that match usage to limit air exposure. Shelf life is set by the supplier specification.

Lots and expiry dates

Flavor, color and oxidation values vary with roast level and kernel quality, so record them and the aflatoxin result for each lot. Rotate first-expiry, first-out, and keep allergen controls in place for any facility that also handles non-nut products.

Regulatory status

Facts from regulators and standards bodies, each linked to its source.

This is general information, not regulatory advice. Status differs by country and by how the ingredient is used, so check the rules for your product and market.
