A GFSI food safety certification
Most retailers expect an SQF, BRCGS or similar GFSI-benchmarked certificate. Ask for the current certificate and the grade from the last audit.
A written food safety plan
Under FSMA, facilities need a preventive controls plan. Ask how they handle allergens, changeovers between your product and others, and environmental monitoring.
Organic, kosher or gluten-free when you need it
If your label makes a claim, the facility has to hold the matching certification. Check that it covers your product line, not just the plant.
Lot coding and a recall plan
Every case and unit should carry a lot code you can trace back to ingredient lots. Ask when they last ran a mock recall and how long it took.
Ingredient sourcing terms
Decide who buys each ingredient and packaging item. If you supply them, agree on how your materials are received, stored, counted and charged for waste.
Run size and scheduling
Co-packers schedule lines weeks or months out. Ask about minimum run size, how often they can run you, and what happens if a run slips.
