Wheat dextrin
Wheat dextrin suppliers and sourcing guide
Wheat dextrin is a soluble fiber made from wheat starch. The starch is heated dry with a small amount of acid, which breaks and re-forms the glucose links so that much of the product resists digestion, and is then refined, decolorized and spray-dried. It is sold as a fine white powder that dissolves in water and drinks without thickening them; because it comes from wheat, it must be labeled as a wheat ingredient.

Forms and grades of wheat dextrin
Suppliers sell different products under the same name. Specify the one you need.
Standard wheat dextrin powder
Spray-dried resistant dextrin from wheat starch, often 70 to 85% dietary fiber.
Gluten-tested grades
Refined grades tested for gluten; whether they can carry a gluten-free claim depends on the result and local rules.
Agglomerated grades
Granulated for faster dispersion in drinks and stick packs.
What to check on the COA
Compare each result with your own specification when the lot arrives.
- Dietary fiber content
- Total dietary fiber by AOAC 2001.03 or 2009.01, on a dry basis.
- Sugars
- Glucose and other low-molecular-weight sugars by HPLC.
- Gluten
- Gluten by ELISA, typically R5 competitive method for hydrolyzed products.
- Moisture, ash and pH
- Drying and refining checks.
- Microbiology
- Total plate count, yeast and mold, coliforms or Enterobacteriaceae, E. coli and Salmonella.
Storage, lots and expiry
Storage and shelf life
Wheat dextrin is hygroscopic, so keep it in sealed, moisture-barrier bags in a cool, dry place and re-seal opened bags. Suppliers set a best-before date for unopened packaging.
Lots and expiry dates
Fiber percentage and gluten results can vary by lot and supplier, so record both from each COA. Keep wheat on your allergen matrix and labels for every lot.
Regulatory status
Facts from regulators and standards bodies, each linked to its source.
21 CFR 184.1277 affirms dextrin as GRAS, including dextrin prepared by dry heating wheat starch, with no limitation other than good manufacturing practice.
