Pea fiber
Pea fiber suppliers and sourcing guide
Pea fiber comes from yellow field peas (Pisum sativum) and is sold in two main types. Hull fiber is the outer seed coat removed before the peas are milled and is mostly insoluble cellulose; cotyledon (inner) fiber is the residue left after pea protein and starch are extracted and holds more water and some pectin-like soluble fiber. Both are dried and milled to off-white or cream powders and are bought by fiber type and particle size.

Forms and grades of pea fiber
Suppliers sell different products under the same name. Specify the one you need.
Pea hull fiber
Milled seed coats, high in insoluble fiber with low protein; used in bakery, snacks and meat products.
Pea cotyledon (inner) fiber
Co-product of pea protein and starch processing; holds more water and gives a smoother texture than hull fiber.
Soluble pea polysaccharide
Water-extracted soluble fiber used to keep proteins suspended in acidified milk drinks.
Particle size grades
Fine grades for drinks and smooth batters, coarser grades for meat and extruded products.
Organic and non-GMO
From certified organic or identity-preserved peas.
What to check on the COA
Compare each result with your own specification when the lot arrives.
- Total dietary fiber
- Total, soluble and insoluble fiber by AOAC 991.43 or 2011.25; the soluble share separates hull from cotyledon fiber.
- Protein and starch
- Protein by Dumas or Kjeldahl and starch by an enzymatic method, showing how much of the powder is not fiber.
- Moisture
- Loss on drying; affects flow, caking and microbial stability.
- Water holding capacity
- Grams of water held per gram of fiber, the main functional spec.
- Particle size
- Sieve analysis or laser diffraction to confirm the grade.
- Microbiology
- Total plate count, yeast and mold, coliforms or Enterobacteriaceae, E. coli and Salmonella.
Storage, lots and expiry
Storage and shelf life
Keep pea fiber in sealed, lined bags in a cool, dry place away from strong odors, and re-seal opened bags. It is a stable dry powder, but moisture uptake can cause caking and microbial growth. Suppliers set a best-before date for unopened packaging.
Lots and expiry dates
Protein and starch carryover vary with the protein or starch process the fiber came from, so check fiber, protein and water holding on each COA. Record whether the lot is hull or cotyledon fiber, since they are not interchangeable in a formula.

What forms of pea fiber can brands buy?
Common forms include pea hull fiber, pea cotyledon (inner) fiber, soluble pea polysaccharide, particle size grades and organic and non-GMO. Ask each supplier for the specification sheet of the exact grade they quote.
What should the COA for pea fiber include?
Expect total dietary fiber, protein and starch, moisture, water holding capacity, particle size and microbiology, each with its method, specification and result for that lot.
How should pea fiber be stored?
Keep pea fiber in sealed, lined bags in a cool, dry place away from strong odors, and re-seal opened bags. It is a stable dry powder, but moisture uptake can cause caking and microbial growth. Suppliers set a best-before date for unopened packaging.
