Brazzein

Brazzein suppliers and sourcing guide

Brazzein is a small sweet-tasting protein first found in the fruit of Pentadiplandra brazzeana, a West African plant. Commercial brazzein is made by precision fermentation, in which a production organism such as the yeast Komagataella phaffii or the mold Aspergillus oryzae carries the gene for brazzein; the protein is then recovered, purified and dried. It is a newer ingredient sold by a small number of suppliers as a powder or liquid preparation for use at low levels, often alongside other sweeteners.

Forms and grades of brazzein

Suppliers sell different products under the same name. Specify the one you need.

  • Purified powder

Dried brazzein preparation with a stated protein content, for beverages, dairy alternatives and confectionery.

  • Liquid preparation

Brazzein in solution at a stated concentration for beverage and syrup dosing.

  • Sweetener blends

Brazzein combined with other sweeteners or carriers to match sucrose sweetness at practical dosing levels.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Brazzein content (HPLC)
Brazzein protein by HPLC against a reference standard, plus total protein by Kjeldahl or Dumas.
Identity
SDS-PAGE or mass spectrometry to confirm the protein and its molecular weight.
Production organism
Absence of viable production organism, and residual host DNA where the supplier's specification includes it.
Moisture and ash
Loss on drying and ash as purity checks on the dried preparation.
Heavy metals and microbiology
Lead and other metals by ICP-MS, plus total plate count, yeast and mold, and pathogens.

Storage, lots and expiry

Storage and shelf life

Store brazzein preparations sealed in a cool, dry place as directed by the supplier; liquid preparations may need refrigeration. Because this is a new ingredient, shelf life and storage conditions come from each supplier's specification and stability data rather than from long trade experience.

Lots and expiry dates

Record brazzein content and total protein for each lot, since sweetness tracks the active protein. Keep the production organism and the supplier's GRAS notice number on the lot record, because each notice covers that supplier's own process.

Regulatory status

Facts from regulators and standards bodies, each linked to its source.

This is general information, not regulatory advice. Status differs by country and by how the ingredient is used, so check the rules for your product and market.

Frequently asked questions

What forms of brazzein can brands buy?

Common forms include purified powder, liquid preparation and sweetener blends. Ask each supplier for the specification sheet of the exact grade they quote.

What should the COA for brazzein include?

Expect brazzein content (HPLC), identity, production organism, moisture and ash and heavy metals and microbiology, each with its method, specification and result for that lot.

How should brazzein be stored?

Store brazzein preparations sealed in a cool, dry place as directed by the supplier; liquid preparations may need refrigeration. Because this is a new ingredient, shelf life and storage conditions come from each supplier's specification and stability data rather than from long trade experience.

What is the regulatory status of brazzein?

GRN 1142 (brazzein produced by Komagataella phaffii, notified by Oobli, Inc.) closed with FDA having no questions, for that notifier's substance and intended uses. GRN 1167 (brazzein produced by Komagataella phaffii, notified by Perfect Day, Inc.) closed with FDA having no questions, for use as a sweetener in foods generally at levels consistent with good manufacturing practices. GRN 1207 (brazzein preparation produced by Aspergillus oryzae, notified by Nanjing Bestzyme Bio-Engineering Co. Ltd.) closed with FDA having no questions.
