Apple fiber
Apple fiber suppliers and sourcing guide
Apple fiber is made from apple pomace, the peel, flesh, core and seeds left after apples are pressed for juice. The pomace is dried and milled, and some grades are washed to remove sugars first. The result is a tan to brown powder that combines insoluble fiber with pectin, residual fruit sugars and a fruity flavor, used in bakery, bars, cereals and fillings.

What to check on the COA
Compare each result with your own specification when the lot arrives.
- Total dietary fiber
- Total, soluble and insoluble fiber by AOAC 991.43 or 2011.25.
- Sugars
- Fructose, glucose and sucrose by HPLC, which feed into the sugars line on the label.
- Moisture and water activity
- Low water activity keeps mold from growing in the powder.
- Patulin
- Patulin by HPLC-UV or LC-MS/MS, a mold toxin found in damaged apples.
- Pesticide residues
- Multi-residue screen by LC-MS/MS and GC-MS/MS, since peels carry most residues.
- Microbiology
- Total plate count, yeast and mold, coliforms or Enterobacteriaceae, E. coli and Salmonella.
Storage, lots and expiry
Storage and shelf life
Keep apple fiber in sealed, moisture-barrier bags in a cool, dry place away from light, since it is hygroscopic and the color darkens with heat and time. Re-seal opened bags. Suppliers set a best-before date for unopened packaging.
Lots and expiry dates
Sugar content, color, fiber and patulin vary with apple variety, season and juice process, so check them on each COA. Record apple origin and whether the lot is washed or unwashed.
