Strawberry powder

Strawberry powder suppliers and sourcing guide

Strawberry powder is made from garden strawberries (Fragaria x ananassa), either by freeze-drying whole or sliced fruit and milling it, or by spray-drying strawberry juice or puree, usually with a carrier such as maltodextrin. Freeze-dried powder keeps more of the red color, aroma and seeds; spray-dried powder is finer and dissolves more easily. Brands use it in drink mixes, yogurts, bars, frostings and coatings.

Forms and grades of strawberry powder

Suppliers sell different products under the same name. Specify the one you need.

  • Freeze-dried whole fruit

Whole or sliced berries freeze-dried and milled, 100 percent fruit, with visible seed specks unless sieved.

  • Seedless or sieved

Freeze-dried powder sieved to remove seeds for smooth drinks and coatings.

  • Spray-dried juice powder

Juice or puree dried with maltodextrin or gum arabic, fine and soluble, with a stated fruit solids level.

  • Organic

    Certified organic powders, usually freeze-dried.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Identity and fruit content
Fruit solids versus carrier, with color, odor and taste checked against a standard sample.
Moisture and water activity
Loss on drying and water activity; freeze-dried powder is very hygroscopic and cakes if moisture rises.
Color
Color by colorimeter (L*a*b*) or absorbance, since the red pigments fade with heat, light and moisture.
Microbiology
Total plate count, yeast and mold, coliforms or Enterobacteriaceae, E. coli and Salmonella; low-moisture foods that are eaten without a cooking step need a negative Salmonella result per lot.
Pesticides
Multi-residue pesticide screen by GC-MS/MS and LC-MS/MS; strawberries are a crop where buyers often specify residue limits.

Storage, lots and expiry

Storage and shelf life

Keep in sealed moisture- and light-barrier packaging in a cool, dry place, and reseal immediately after opening, since freeze-dried powder absorbs moisture within minutes in humid air. Shelf life is set by the supplier's specification, and older lots are checked for color, caking and moisture.

Lots and expiry dates

Color, acidity and aroma vary with berry variety, harvest and drying run, so record fruit solids, moisture and color for each lot. Rotate first in, first out because color fades with age.
