Sprouted grain flour
Sprouted grain flour suppliers and sourcing guide
Sprouted grain flour is made from whole grains that are soaked and allowed to germinate briefly under controlled conditions, then dried (kilned) and milled with the bran and germ intact. Germination is stopped early, usually when the sprout is still short. Wheat, spelt, rye, brown rice, buckwheat and other grains are sold this way for breads, crackers, pasta and snacks.

What to check on the COA
Compare each result with your own specification when the lot arrives.
- Falling number or amylase activity
- Falling number test for alpha-amylase activity, which rises with sprouting and changes dough and crumb.
- Moisture and protein
- Oven moisture and protein by Kjeldahl or NIR, as for other flours.
- Microbiology
- Total plate count, yeast and mold, coliforms, E. coli and Salmonella; sprouting is warm and moist, so counts can be higher than in regular flour.
- Mycotoxins
- Deoxynivalenol (DON) and other mycotoxins by ELISA or LC-MS/MS for wheat and other cereals.
- Particle size
- Sieve analysis for the grind.
Storage, lots and expiry
Storage and shelf life
Sprouted whole grain flour contains germ and bran oils, so keep it cool and dry in sealed bags, and refrigerate or freeze for long holds. Keep away from odors and pests. Shelf life follows the supplier's spec and is usually shorter than for refined flour.
Lots and expiry dates
Enzyme activity, falling number and flavor vary with how long and how warm the grain was sprouted, so record grain type, origin and falling number per lot. Test-bake new lots before production and rotate first-expiring lots first (FEFO).
