Pineapple powder

Pineapple powder suppliers and sourcing guide

Pineapple powder is made from pineapple (Ananas comosus), most often by spray-drying juice or juice concentrate with a carrier such as maltodextrin, or by freeze-drying the fruit and milling it. Spray-dried grades are fine and soluble for drink mixes; freeze-dried powder is closer to fresh fruit in flavor. Pineapple juice is high in sugar and acid, so carrier-free spray drying is difficult and most spray-dried powders state a carrier level.

Forms and grades of pineapple powder

Suppliers sell different products under the same name. Specify the one you need.

  • Spray-dried juice powder

Juice or concentrate dried with maltodextrin or gum arabic, with a stated fruit solids level.

  • Freeze-dried

Fruit freeze-dried and milled, 100 percent pineapple, hygroscopic.

  • Juice concentrate

Liquid concentrate at a stated Brix, the usual starting material for powders and beverages.

  • Organic

Certified organic powders, mostly from Costa Rica, the Philippines and Thailand.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Identity and fruit content
Fruit solids versus carrier, with color, odor and taste checked against a standard.
Moisture and water activity
Loss on drying and water activity, which control caking.
Acidity and Brix
Titratable acidity (as citric acid) and, for concentrate, Brix by refractometer.
Microbiology
Total plate count, yeast and mold, coliforms or Enterobacteriaceae, E. coli and Salmonella; low-moisture foods that are eaten without a cooking step need a negative Salmonella result per lot.
Pesticides
Multi-residue pesticide screen by GC-MS/MS and LC-MS/MS.

Storage, lots and expiry

Storage and shelf life

Keep sealed in moisture-barrier packaging in a cool, dry area and reseal quickly, since the powder absorbs moisture and hardens. Shelf life is set by the supplier's specification, and older stock is checked for caking, moisture and browning.

Lots and expiry dates

Acidity, sweetness and carrier level vary by supplier and run, so record fruit solids, acidity and moisture per lot. Rotate first in, first out.
