Oat flour
Oat flour suppliers and sourcing guide
Oat flour is whole oat groats (Avena sativa) ground into flour. The oats are cleaned and dehulled, then usually steamed or kilned to stop the enzymes that would otherwise make the fat go rancid, and milled. Because the bran and germ stay in, it is a whole grain flour. Brands use it in baked goods, bars, cereals, oat drinks and baby foods, and gluten-free grades come from oats grown and handled to avoid wheat, barley and rye.

What to check on the COA
Compare each result with your own specification when the lot arrives.
- Moisture
- Moisture by oven drying, usually around 10 percent or less.
- Lipase or peroxidase activity
- A test that confirms the heat treatment stopped enzyme activity, which sets shelf life.
- Gluten
- Gluten by R5 ELISA for gluten-free grades, with a limit below 20 ppm.
- Mycotoxins
- Deoxynivalenol, T-2/HT-2 and ochratoxin A by LC-MS/MS.
- Glyphosate and pesticides
- Pesticide residue screen, often with glyphosate called out by buyers.
- Microbiology
- Standard plate count, yeast and mold, E. coli and Salmonella.
Storage, lots and expiry
Storage and shelf life
Store sealed in a cool, dry place away from odors and pests, because oat flour is higher in fat than wheat flour and can turn rancid, especially if the heat treatment was incomplete. Keep stock off the floor and rotate it. Shelf life is set by the supplier, often 6 to 12 months, with flavor and enzyme activity the main checks on older stock.
Lots and expiry dates
Fat, flavor and gluten results vary by crop and mill, so record gluten test results and the crop year for each lot. Use stock in production-date order.
