Mango powder
Mango powder suppliers and sourcing guide
Mango powder for food and drink brands is usually ripe mango pulp (often Alphonso or Totapuri from India, or varieties from Latin America and the Philippines) that is spray-dried with a carrier such as maltodextrin, or freeze-dried slices milled to powder. Amchur, a sour spice made from dried unripe mango slices, is a different product. The ripe-fruit powders are used in drink mixes, smoothies, yogurts and confectionery.

Forms and grades of mango powder
Suppliers sell different products under the same name. Specify the one you need.
Spray-dried with carrier
Pulp or juice concentrate dried with maltodextrin or gum arabic, soluble and free-flowing.
Freeze-dried
Slices or pulp freeze-dried and milled, 100 percent fruit, with stronger color and aroma.
Amchur (green mango)
Dried, milled unripe mango used as a sour seasoning rather than a sweet fruit powder.
Organic
Certified organic powders from India, Mexico or the Philippines.
What to check on the COA
Compare each result with your own specification when the lot arrives.
- Identity and fruit content
- Fruit solids versus carrier and mango variety, with sensory comparison to a standard.
- Moisture and water activity
- Loss on drying and water activity; mango powder is sticky and cakes quickly above specification.
- Color and acidity
- Color by colorimeter and titratable acidity, which vary with variety and ripeness.
- Microbiology
- Total plate count, yeast and mold, coliforms or Enterobacteriaceae, E. coli and Salmonella; low-moisture foods that are eaten without a cooking step need a negative Salmonella result per lot.
- Pesticides and metals
- Multi-residue pesticide screen by GC-MS/MS and LC-MS/MS, plus lead by ICP-MS.
Storage, lots and expiry
Storage and shelf life
Keep sealed in moisture-barrier packaging in a cool, dry place and reseal quickly after opening; warm, humid storage leads to hard caking and browning. Shelf life is set by the supplier's specification, and older lots are checked for moisture, color and lumps.
Lots and expiry dates
Color, sweetness and acidity vary by variety, ripeness and season, so record variety, fruit solids and moisture per lot. Rotate first in, first out.
