Gum ghatti

Gum ghatti suppliers and sourcing guide

Gum ghatti is the dried exudate that forms where the bark of Anogeissus latifolia, a tree of the dry forests of India and Sri Lanka, is wounded. The tears are collected, sorted, cleaned and milled, and some grades are dissolved and spray-dried. It is used as an emulsifier for oil-in-water systems such as beverage emulsions and oil-soluble vitamin powders.

Forms and grades of gum ghatti

Suppliers sell different products under the same name. Specify the one you need.

  • Spray-dried powder

Dissolved, filtered and spray-dried for consistent emulsifying performance and lower microbial counts.

  • Milled raw gum

Sorted and ground tears; more variable color and insolubles.

  • Grades by color

Paler grades are higher quality with fewer impurities.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Viscosity
Viscosity of a 1% solution, within the range claimed by the vendor.
Identification
Lead acetate identification test described in the regulation.
Loss on drying, total ash and acid-insoluble ash
Purity limits from the regulation.
Arsenic and lead
By ICP-MS or AAS, against the limits in the regulation.
Microbiology
Total plate count, yeast and mold, E. coli and Salmonella.

Storage, lots and expiry

Storage and shelf life

Store gum ghatti sealed in a cool, dry place; it is hygroscopic and cakes in humid air. Shelf life is set by the supplier's specification.

Lots and expiry dates

As a wild-collected tree exudate, quality varies with season and region, so record viscosity, color and emulsion performance per lot. Few suppliers process it, so keep documentation for a qualified backup.

Regulatory status

Facts from regulators and standards bodies, each linked to its source.

This is general information, not regulatory advice. Status differs by country and by how the ingredient is used, so check the rules for your product and market.
