Beef protein isolate

Beef protein isolate suppliers and sourcing guide

Beef protein isolate is a high-protein powder made from cattle tissues, usually by cooking beef raw materials in water, hydrolyzing the protein with enzymes, then filtering, defatting, concentrating and spray drying the liquid. Commercial powders are often 90% protein or more. Because many products are made from connective tissue as well as muscle, their amino acid profile can resemble collagen, so buyers should ask which tissues are used. It is sold for dairy-free protein powders and bars.

Forms and grades of beef protein isolate

Suppliers sell different products under the same name. Specify the one you need.

  • Hydrolyzed beef protein isolate

Enzyme-hydrolyzed, spray-dried powder at 90% protein or more; the common supplement grade.

  • Muscle-derived beef protein

Powder made mainly from muscle tissue, with a different amino acid profile from connective-tissue grades.

  • Grass-fed

Made from grass-fed cattle, with the claim backed by supplier documentation.

  • Instantized

Agglomerated or lecithin-coated for faster mixing in shakes.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Protein (Kjeldahl or Dumas)
Total nitrogen times 6.25, as-is and on a dry basis.
Amino acid profile
Amino acids by HPLC after hydrolysis, including hydroxyproline as a marker of collagen content.
Moisture, fat and ash
Proximate analysis; ash can be high from salts used in processing.
Microbiology
Total plate count, coliforms, yeast and mold, Salmonella and E. coli.
Heavy metals
Lead, arsenic, cadmium and mercury by ICP-MS against the buyer's limits.

Storage, lots and expiry

Storage and shelf life

Store sealed, cool and dry; hydrolyzed powders are hygroscopic and cake when exposed to humid air. Shelf life is set by the supplier's specification, with a retest of moisture and micro for older stock.

Lots and expiry dates

Record protein and amino acid profile for each lot, and keep the country of origin and cattle-material documentation (see the regulatory notes) in the lot file. Rotate first-expired, first-out.

Regulatory status

Facts from regulators and standards bodies, each linked to its source.

This is general information, not regulatory advice. Status differs by country and by how the ingredient is used, so check the rules for your product and market.

Frequently asked questions

What forms of beef protein isolate can brands buy?

Common forms include hydrolyzed beef protein isolate, muscle-derived beef protein, grass-fed and instantized. Ask each supplier for the specification sheet of the exact grade they quote.

What should the COA for beef protein isolate include?

Expect protein (Kjeldahl or Dumas), amino acid profile, moisture, fat and ash, microbiology and heavy metals, each with its method, specification and result for that lot.

How should beef protein isolate be stored?

Store sealed, cool and dry; hydrolyzed powders are hygroscopic and cake when exposed to humid air. Shelf life is set by the supplier's specification, with a retest of moisture and micro for older stock.

What is the regulatory status of beef protein isolate?

Health Canada's Workout Supplements monograph lists beef protein isolate with the muscle of Bos taurus as the source material. 21 CFR 189.5 states that no human food shall be manufactured from, processed with, or otherwise contain prohibited cattle materials. Under 21 CFR 189.5, makers of human food that contains material from cattle must keep records sufficient to demonstrate it does not contain prohibited cattle materials.
