Banana powder
Banana powder suppliers and sourcing guide
Banana powder is ripe banana (mostly Cavendish types of Musa acuminata) that has been pureed and spray-dried or drum-dried, or sliced and dried then milled. Spray-dried grades usually contain a carrier such as maltodextrin, while drum-dried flakes and freeze-dried powders can be 100 percent fruit. Green banana flour, milled from unripe fruit, is a separate product high in resistant starch rather than sugar.

Drum-dried flakes or powder
Puree dried on heated drums, usually 100 percent banana, with a cooked, caramelized note.
Freeze-dried
Slices or puree freeze-dried and milled, closest to fresh flavor and color, at higher cost.
Green banana flour
Unripe banana dried and milled, used as a starchy flour rather than for sweetness.
Organic
Certified organic powders, commonly from Ecuador, the Philippines or India.
What to check on the COA
Compare each result with your own specification when the lot arrives.
- Identity and fruit content
- Statement of banana solids versus carrier, with a sensory check of color, odor and taste against a standard.
- Moisture and water activity
- Loss on drying and water activity; low values keep the powder from caking and browning.
- Particle size and solubility
- Sieve analysis and a dissolution or dispersibility check for drink-mix grades.
- Microbiology
- Total plate count, yeast and mold, coliforms or Enterobacteriaceae, E. coli and Salmonella; low-moisture foods that are eaten without a cooking step need a negative Salmonella result per lot.
- Pesticides and metals
- Multi-residue pesticide screen by GC-MS/MS and LC-MS/MS, plus lead and cadmium by ICP-MS.
Storage, lots and expiry
Storage and shelf life
Banana powder is hygroscopic, so keep it sealed in moisture-barrier bags, in a cool, dry place away from light; once opened, reseal promptly to prevent caking. Shelf life is set by the supplier's specification, and older lots are checked for moisture, color and clumping before use.
Lots and expiry dates
Color, sweetness and carrier level vary by fruit ripeness and dryer settings, so record the fruit-to-carrier ratio and moisture for each lot. Rotate first in, first out because powders darken with age and heat.
