Ammonium phosphatide

Ammonium phosphatide suppliers and sourcing guide

Ammonium phosphatide is a mixture of ammonium salts of phosphatidic acids made from edible fat, usually partially hardened rapeseed oil. The fat is converted to mono- and diglycerides by glycerolysis, then phosphorylated and neutralized with ammonia. It is a soft, oily solid that chocolate makers use as an alternative to lecithin to reduce the viscosity of molten chocolate and coatings.

Forms and grades of ammonium phosphatide

Suppliers sell different products under the same name. Specify the one you need.

  • Standard grade

Semi-solid or paste supplied in pails or drums for chocolate and coating production.

  • Rapeseed-based

The common grade, made from rapeseed oil, often declared non-GMO.

  • Kosher and halal grades

Certified grades offered by some suppliers.

What to check on the COA

Compare each result with your own specification when the lot arrives.

Phosphorus content
Total phosphorus by titration or ICP, which tracks the phosphatide content.
Ammonium nitrogen
Nitrogen as ammonium, which confirms neutralization.
Petroleum ether insolubles
Insoluble matter, a standard purity check for this additive.
pH
pH of a stated dispersion.
Heavy metals
Lead, and often arsenic, cadmium and mercury, by ICP-MS or AAS against the supplier's specification or Food Chemicals Codex (FCC) limits.

Storage, lots and expiry

Storage and shelf life

Keep ammonium phosphatide in closed containers in a cool, dry place away from light and heat; warm storage softens the product and speeds oxidation. Shelf life is set by the supplier's specification, with retest of appearance and key chemistry for older stock.

Lots and expiry dates

Phosphorus content can vary between lots and changes how much is needed to reach a target chocolate viscosity. Record it from each COA and check rheology when switching lots or suppliers.

Regulatory status

Frequently asked questions

What forms of ammonium phosphatide can brands buy?

Common forms include standard grade, rapeseed-based and kosher and halal grades. Ask each supplier for the specification sheet of the exact grade they quote.

What should the COA for ammonium phosphatide include?

Expect phosphorus content, ammonium nitrogen, petroleum ether insolubles, pH and heavy metals, each with its method, specification and result for that lot.

How should ammonium phosphatide be stored?

Keep ammonium phosphatide in closed containers in a cool, dry place away from light and heat; warm storage softens the product and speeds oxidation. Shelf life is set by the supplier's specification, with retest of appearance and key chemistry for older stock.

What is the regulatory status of ammonium phosphatide?

GRN 219 (ammonium phosphatide, notified by Palsgaard A/S) closed on June 29, 2007 with FDA having no questions, for use as an emulsifier in chocolate and vegetable fat coatings at levels up to 0.7%.
